  5. Tornatore Etna Rosso 2015

    Winery Notes: This blend of Nerello Mascalese and Nerello Cappuccio is harvested by hand into small crates and quickly brought to the winery where they are manually sorted prior to being destemmed and transferred to concrete tanks, where they macerate for about 10/12 days at a temperature of 22/25 °C. After fermentation, the grapes are left to macerate for a few days more, then the wine is separated from grape skins, which are pressed with the traditional vertical press and aged for about one year into big wooden barrels and 3 months in bottle. Tasting Note: Ruby red with faint purple, typical of this variety which is not very rich in color. Clear hints of red berries, morello cherry and black cherry on the nose. The taste is characterized by its typical balanced tannins and a surprising fullness, flavor and persistence.

It’s such a lovely honest drink. Blackcurrant pastille, raspberry and raspberry tea, a little spice and black olive, maybe some violet. Medium bodied, juicy and fine, lovely pastille character and ripe raspberry, but savoury too with the black olive and sweet tobacco savouries. Tannin sits comfortably inside the wine throughout, and the finish is fresh and long, and fetchingly earthy. A delight to drink."

  9. Domaine La Sarabande Misterioso 2014

    This wine has a deep rich ripe cherry appearance. The aromas are of baked dark cherries, roasted peanuts, leather and nutmeg spice smells too. The palate is again dominated by cherries but there is some attractive strawberry characters, dried herbs and pepper combined with fine tannins. The wine finishes dry but a balanced acidity helps to lengthen the palate. The Misterioso 2014 was made ??from a blend of mostly Grenache and  Syrah. It contains a small amount of Mourvedre and carignan as well. This wine is sourced from our ‘Les Rabasses’ vineyard which consists entirely of classic blue/grey schist. The Grenache and Mourvedre vines are trained in the traditional ‘Goblet’ style while the Syrah sits across the top of the hill and is trained on pallisage.  The vineyards have been minimally worked to avoid compaction of the subsoil and sprayed with organic sprays to prevent mildew.  The varieties were picked separately with an aim to make a wine that was fresh and fruity with soft tannins. We tasted the grapes until they fit this profile then harvested them by hand. The grapes were sorted in the vineyards so only the best quality fruit arrived at the cellar.

  10. Domaine La Sarabande Vielles Vignes Faugeres 2013

    The mushroom and aromas of premium dried hung beef dominate initially as you take your first smell. Then the fruity nuances of French mûre and black pepper leap out of the glass all sumptuously encased by a subtle smoky bouquet. This rich mulberry coloured wine explodes with fresh balanced fruits as it enters the mouth. It is finely balanced with grainy tannins and lovely acidity. The lingering taste is reminiscent of smoky tobacco and slow cooked beef Bourguignon. Drink now with rich meaty dishes or the stinkiest French cheeses. As the oldest vineyards in Faugères we believe that Carignan must be showed respect. The vines that produced this wine are at least 65 years old. Vines of this age are well anchored in the soils and can extract water and minerals even on very hot years. The vines also produce a naturally small crop that is highly concentrated and balanced. We have blended some Syrah to add some tannin and fresh fruit characters. The grapes were picked by hand when we determined that the sugar, the acidity and the taste was to our liking. The grapes were destemmed and placed into an open top fermenter where they were hand plunged so as not to over extract any harsh tannins. No yeast culture was added so the fermentation was natural as was the malolactic fermentation. The wine spent ten months in 1-3 year old 500L French oak barrels. We bottled without fining or filtration.
