    Winery Notes: When one believes that the best wine is made with the least intervention, nature seems able to throw in a few surprises. 2007 was such a year. A complex vintage, a vintage where the fruit we grew was atypical, so I made the decision that the fruit would be best served by not keeping the varieties separate but by making a vineyard blend. This blend was bottled in November 2008 and although really good and extremely interesting, was like the fruit at harvest, atypical. The tannins especially, were quite different from what we have come to expect of Castagna wines – it needed time in bottle.

    Winery Tasting Notes...Vinification: This is a special wine that employs the theory “less is more.” 50% whole bunches of Grenache and Touriga are placed in the bottom of an open fermenter, with the balanced crushed on top. The ferment is allowed to proceed with wild rather than cultured yeasts for seven days. The wine is then gently basket pressed to stainless steel tank where it is settled naturally and bottled without the use of oak, fining or filtration.Nose: A true interpretation of vineyard and fruit. Lifted aromas of red and green raspberries with cherries and musky spice.Palate: Untamed, but utterly delicious. Wild black fruits, with a plumy bass tone. Lovely spice and savouriness kick through the finish. A joy to drink.
