    Winery notes: "60% Pinot Noir, 40% Chardonnay. Loftia is famouslycrisp and zesty, the perfect aperitif style sparkling.Aromas of baked red apple and lemon crème bruléeon the nose precede the creamy mousse and citrusfinish.Winemaking: Different parcels of fruit are all hand-picked and thenfermented in stainless steel tanks. In 2015 partialMalolactic ferment took place to soften the palateand add complexity while retaining the perfectnatural acidity in the blend. Tirage (bottling)happened in late winter of 2015 before leaving thebottles to develop with time on lees in the cool, darkcellars.Each bottle is riddled and disgorged on site in ourLongwood winery.   5. Boll & Cie Extra Brut Blanc De Blancs Nv

    This non-vintage cuvee from Champagne Boll and Cie (pronounced Boll et Chi) spends more tha 4 years on lees so it picks up a bit of toastiness on the nose and the palate. Made from 100% chardonnay too so it hits with a nice nose of exotic fruit characters, not quite creme brulee, more honied-almonds, light brioche, sweet cedar. But the palate is reasonably crunchy and dry with good length and freshness to make it well worth its price.  Winery Notes: Extra Brut, Multi-parceled wine from 3 different vineyards, Montgeux, Vindey and Mesnil sur Oger100% Chardonnay, Low dosage and low amount of sulphites. A bright Champagne with exceptional freshness, clean on the palate. Mineral, light fruit with notes of fresh tobacco, straw and citrus flavors. Easy to drink and ideal as aperitif or with sea food.

    90 points Nick Stock: "Straight up confession; I am wary of wine that is heavily framed around process as it can often see actual wine quality shuffled back in the pecking order. Not so here. This is a tiny make of carignan (46%), roussanne (42%) and graciano (12%) all fermented in amphorae that contain some Yangarra clay. Pale red with a gently creamy foam, it smells of dried cranberries and goji berries, clear yeasty notes and some dried yellow rose and stone fruit perfume. It foams and fizzes smoothly on the palate, delivering a burst of raspberry and very gently sweet nectarine flavor, yeasty savory notes kick in and the finish has a neat phenolic stamp. Chill and drink fast and don't mind the red crystalline sediment, it's a natural by-product of the last phase of fermentation of grape sugars in the bottle, which is what gives the wine its light fizz". (James Suckling.com - Nick's tasting report, Feb 2016). Winery Notes: “Pét’Nat” is short for petillant naturel (French). Petillant denotes lightly bubbly, and naturel refers to the fermentation by native yeasts from the sugars of the grape. We have honoured the natural process by not making any additions. These natural methods mean each bottle may vary a little, and there will be harmless yeast and crystal sediment in the wine. Serve chilled to minimise foaming. Hand picked, destemmed, berry sorted before being lightly basket pressed. At approximately 0.7 Baume (or 12g/L Sugar) we used a coarse filtration before allowing the remainder of fermentation to occur in bottle. Bottled by hand, no additives, no fining, and all natural yeast. Disgorged to remove heavy tartrate crystals.

    "Golden coloured with light bubble. Offers quince and pineapple scents, whiff of pepper, some rockmelon whiffs. Pleasing albeit just slightly candle-waxy-essence perfume. Palate has some good zing to acidity, pineapple/stone fruit flavours, ripe lemon and bright, crisp finish. Pleasing drinking here, with a good feel all up for the style.""This is a blanc de blancs (chardonnay) from organic (certified) fruit produced in the methode ancestral style (petillant naturel), where the primary ferment continues its magic in bottle. Risky business. This popped and gushed a touch, but only lost the top of the neck. Some will, some won’t, the thrill of pet nats. Ha.     Winery Notes: This very fine blend is supremely full and elegant. Generous, fresh and subtle, Brimoncourt Blanc de Blancs is perfect as a distinctive apéritif... A well balanced Champagne, fresh and generous made exclusively from Premiers and Grands Crus Chardonnay grapes. A large majority of vines based in the Côte des Blancs gives this wine an exceptional elegance. He has a very light yellow colour with golden glimmers. The typical nose opens on notes of fresh fruits with aromas of white flowers (hawthorn and acacia). The palate is fleshy, smooth, enveloped by the freshness of citrus notes, lemon, grape- fruit zest. A remarkable sweetness and a lingering mineral finish invite to prolong the pleasure.  Extremely fresh and subtle, Brimoncourt’s Blanc de Blancs is ideal for a distinctive aperitif; it also agrees with smoked salmon, sashimi, sushi, shellfish and grilled fish.
