  4. Domaine Fevre Chablis 2017

    Fèvre families have been working at the heart of Chablis vineyards since 1745 Winery Notes: Our CHABLIS come from parcels situated beside the village of FONTENAY-Près-CHABLIS, at the very heart of Chablis’ vineyards. On high plains or steep hills, all our Chablis grow on stony soils (Kimmeridgien Limestone) which allow a moderate production. Most of our vineyards are between 15 and 25 years old. Some parcels were planted by Gilles’ great grandfather, Marcel, around 1950/1960. Our Chablis are fresh and fruity (white flesh fruits, like peach and pear, with citrus notes), and already showing good minerality. Pleasant with an aperitif, they make a good marriage with oysters, shell fish and grilled fish, but also with traditional Burgundy recipes such as “jambom persillé” (ham with parsley).

    IMPORTER'S NOTES. From Manchester Ridge, Mendocino County and sourced in the early hours to retain freshness from 990m elevation on Gold Ridge sandy loam soils by hand. 80% wholebunch fruit and 20% destemmed are pressed and left to macerated on skins for 24 hours before being transferred to neutral French barriques. Here the wine is allowed to complete primary and secondary fermentation without the addition of any factory adds and zero battonage. The wine is bottled unfined, unfiltered and with 60ppm sulphur added.
