Notes
Hand picked, whole-bunch pressed to tank. Left to settle overnight. Racked off gross lees to barrel, of which
20% is new. Wild fermented followed by malolactic. Left on fine lees for 12 months, battonage happens but
frequency dependant on vintage. Moved to tank for another 4 months before bottling.
