"Lucy Croser and Xavier Bizot are creating some of the finest sparkling wines in Australia. This should come as no surprise considering the DNA of both. Lucy is the daughter of Australian winemaking pioneer Brian, and Xavier the great nephew of Madame Lily Bollinger of the outstanding Champagne house of the same name. Xavier’s father Christian (then CEO of Bollinger) established a vineyard in the Piccadilly Valley in the mid 1990s and this is the source of chardonnay for this magnificent sparkling that spent 42 months on lees.
There’s a fabulous mousse and really persistent bead upon pouring. Really complex aromas of baked apple, citrus, nuts, nougat and honeysuckle. So much to like here. Flavours are fine, focused and very complex. There’s lovely weight and mouth-feel and the length is impressive. The flavours are in the citrus, just-ripe stone-fruit and toast realm, and there’s also a textured saline minerality. Top class fizz."
