"St Florence: Semillon, M&J Becker was made by blending barrel aged golden mixed culture fermentation ale with 300kg of organic handpicked, whole bunch Semillon from the Ablington vineyard in Pokolbin, NSW. After a five month maceration and refermentation of fruit and beer, it was bottled and allowed to naturally carbonate and mature for 6 months before release. Tasting notes by Meesh: Holding a beautiful fluffy white head, St Florence presents with gentle green apple, peach and citrus character from the beautiful Semillon fruit, met with a pleasant level of funk. On the palate it is soft and brimming with fruit, carrying through some fruit weight which gives it the illusion of sweetness. Silky in texture and beautifully integrated, there's a herbal element there too, plus some skinsy spice and gentle oak on the finish." Brewery Notes
